Instant Pot Deviled Eggs

Pot lucks, church gatherings, retirement parties, heck, any social gathering, or a great snack to keep around when you're on a Keto diet. Now, the only thing different here is using the Instant Pot to cook the eggs. Weird, I know. It just sounds wrong to pressure cook eggs but you won't believe how perfect they are and the easiest eggs you will ever peel. The yellows are actually yellow and not that funky grey-green color that happens when you boil them. If you just want hard-boiled eggs, leave the mixture out. The cooking process will be the same.

Ingredients
Makes a dozen servings

1 cup water for instant pot
1/2 dozen eggs
1/2 cup mayonnaise (whatever your favorite is, but please don't use "salad dressing" sweetened stuff. That's just wrong.)
2 teaspoons onion flakes
2 teaspoons dill relish (ok, I know Southerners are all about sweet pickle relish here so use it if you must but give dill a chance)
1/2 teaspoon prepared horseradish
1/8 teaspoon dried mustard (I use Coleman's)
Salt and pepper to taste
Sprinkle of Paprika

Directions
1. Place rack in bottom of insert and place eggs on rack. Add water, place lid, set vent to sealed and set timer for 5 minutes, high pressure.
2. In the meantime, mix mayo, onion flakes, pickle relish, horseradish and mustard together in small bowl.
3. When timer goes off, let vent naturally for 5 minutes (set a timer so you don't loose track of time if necessary) then release the vent (carefully!) until lid is safe to open.
4. Using oven mitt, carefully remove eggs and place in an ice bath for 5 minutes. Eggs will be very hot so use caution.
5. Peel, cut in half lengthwise and remove the yolks. Place yolks in mayo mixture, mash together until smooth and creamy, taste a bit for seasoning and add salt and pepper if necessary.
6. Place the egg white halves on a plate and fill the holes with the mixture. I use a teaspoon but if you want to get fancy and pipe it in, feel free! Sprinkle with a bit of paprika if desired and enjoy!

Note: If you will be transporting eggs to a gathering, put paper toweling on the bottom of whatever vessel you are using to keep them from sliding around and to absorb extra moisture, helping to maintain freshness.

Recipe Note - For a interesting twist, try stuffing the egg halves with Pimento Cheese instead of the yolks. They are a big hit at social gatherings in the South!.
