Instant Pot Country Style Pork Ribs with Sauerkraut (fresh or frozen)

Grab your instant pot and country style pork ribs, which aren't really ribs at all but strips of shoulder or "butt," but who cares? They're darn good eatin', relatively cheap and you can stick 'em frozen or thawed into your pressure cooker and have a great meal in no time. If you are looking for simple, tried and true, no super chef-y tricks, just a one-pot dinner for the family, here ya go.
Country-style Pork Ribs and Sauerkraut


Ingredients

2-3 pounds country style pork ribs, thawed and cut into serving sized pieces (see notes below if frozen)
1 tablespoon coconut oil/ghee mix or whatever kind you have
1 quart sauerkraut 
1 heaping teaspoon chopped garlic. - I use the prepared stuff in the jar. I don't need to impress anyone with my chopping skills.*
1 1/2 cups chicken or beef broth 
3-4 drops Liquid Smoke (optional)
1 tablespoon Swerve sweetener, brown 
Salt and Pepper to taste


Directions
1. Set your Instant Pot on saute, add the coconut oil/ghee. Liberally salt and pepper all sides of the country-style ribs and place them into the instant pot. Turn until browned on all sides and turn off the saute function. Remove to a plate. If you are using frozen ribs, skip this step and see note below.



2. Put the sauerkraut in the pot, add the garlic, broth (or water), Liquid smoke if using and the Swerve sweetener and stir to mix. Place the ribs on top.
3. Seal the instant pot lid, set the vent on seal, press the Meat/Stew button and set timer for 40-45 minutes.
4. When cook time is done, let the steam release naturally for 10 minutes or so, flip the value to release pressure (carefully!). When pot is ready, open, serve and enjoy!

NOTE: If using frozen ribs, add 10 minutes to cook time and don't worry, if, after releasing steam and going through the correct unsealing process, they aren't tender enough to suit you simply put them back in and let them go again for another 5-10 minutes. The thickness of the ribs will vary cooking times. Also, place them on the bottom under the kraut so they are immersed in the liquid and will boil. You don't want to steam frozen meat.

*If you chop your own fresh garlic, good for you! Here's a tip to get rid of the smell on your hands. Simply lather up and rub your hands around in your stainless steel sink and rinse. Works for onion smell too. You're welcome! Oh, if you don't have a stainless steel sink then try this stainless steel soap.
