Green beans, also known as snap beans or string beans are a Southern staple. They have significantly fewer carbohydrates than other members of the legume family. A one cup serving of cooked green beans has 10 grams of carbohydrates, 4 grams of which are fiber, leaving a net carb count of 6 grams. Cooking these in the Instant Pot makes fresh green vegetables a snap for every day dinner in 30 minutes or less.
Ingredients
1/4 pound regular bacon or salt-cured bacon, hog jowl, smoked turkey or ham hock
1 tablespoon vegetable oil
1 cup chicken broth or water
3 quarts fresh green beans cut into 1 1/2-inch pieces
1 onion (optional) chopped
1 red pepper (optional) chopped
1 to 3 teaspoons salt
Directions
1. Turn the Instant Pot on Saute function. Add 1 tablespoon oil and the bacon, onion and red pepper. Saute until slightly softened.
2. Turn off the Saute function and set the Instant Pot to Pressure Cook High for 15 minutes.
3. Add remaining ingredients to the Pot, secure the lid and turn the steam valve to seal.
4. When timer is complete, carefully release the steam and serve.
